“On the rail” is the weight of the carcass before t is cut into steaks, roasts, etc. The price you pay is based on this weight.
“Off the rail” is the weight of the meat you take home – after the bones and trim have been removed, and the carcass has been cut, wrapped and frozen and sausages have been made. This weight can be 60-70 % of the “on the rail” weight.
When ordering half and whole animals you can get a cutting instruction sheet to have the animal cut according to your preferences and you can keep the bones and organs if you want.
An additional fee will be charged if you order any of these items:
- sausages ($ 4,-/ lbs)
- curing ($ 3,- / lbs)
- burger patties ($ 1,- / lbs)
- vacuum packaging ($ 1,40 / lbs) ($ 0.90 + 0.50 for bag)
- making beef jerky ($ 4,- / lbs)
They are also subject to GST.
