“On the rail” is the weight of the carcass before t is cut into steaks, roasts, etc. The price you pay is based on this weight.
“Off the rail” is the weight of the meat you take home – after the bones and trim have been removed, and the carcass has been cut, wrapped and frozen and sausages have been made. This weight can be 60-70 % of the “on the rail” weight; however: the bones, organs and trim are yours to keep if you want.
When ordering half and whole animals you can get a cutting instruction sheet to have the animal cut according to your preferences.
An additional fee will be charged if you order any of these items:
- sausages ($ 4,-/ lbs)
- curing ($ 2,- / lbs)
- burger patties ($ 1,- / lbs)
- vacuum packaging ($ 1,40 / lbs) ($ 0.90 + 0.50 for bag)
- making beef jerky ($ 4,- / lbs)
They are also subject to GST.
